Salt and Fat

When Korean-American chef Daniel Yi returned to his native hood to create Asian-influenced comfort food, he brought along his Manhattan training (Monkey Bar, Riingo) and pork obsession. Try his crispy pig-trotter torchon, popcorn popped in bacon fat, and pulled-pork sliders with sriracha-spiced barbecue sauce.
