Hot-Weather Highball
Traditionally served neat as a pungent digestif, amaro might seem an odd choice in August's heat. But the bartenders at Boston's Coppa put the bitter liqueur to good use in this improbably refreshing Sardinian iced tea.

The Highball
2 oz amaro, preferably
Meletti
¼ oz fresh lemon juice
Chilled Prosecco
1 lemon wheel, lightly salted
Fill a large highball glass with ice, add the amaro and lemon juice, top with the Prosecco, and garnish with the lemon wheel.
