Caesar Salad

When José Andrés says he's serving Caesar salad, there's no way you're getting romaine on a plate. Officially named the Organized Caesar Salad, this snack-size exercise in deconstruction brings crunchy lettuce wrapped into little packages by thinly sliced jicama and topped with anchovies and Caesar dressing's components—a fluffy nest of Parmesan and a perfectly poached quail-egg yolk.
