Brugal 1888
Rum, long marginalized in cocktails both classic (the Mojito) and inane (the Hurricane), is having a second act as a sipping drink. Given the popularity of single-malts, Brugal is smart to have entrusted the double-distilling of 1888 to the same experts that oversee The Macallan and Highland Park. The battle-tested process involves placing the nascent Dominican rum in casks horizontally and letting it mature for a long, long time; six to eight years in American Oak Casks, followed by two to four years in Oloroso Sherry Casks. The result is a dark amber spirit, with a vanilla-and-ginger nose, and a caramel-coffee-banana flavor.
